tasty tuesday...

more granola!

i love granola!
~~~
it's the only cereal
i eat now
since i discovered
the original recipe last winter.
~~~
this recipe is a revised version
of the original version.
~~~
i love to revise recipes
and i do it aaaaall the time!
~~~
i'm calling this version
autumn granola!
~~~
autumn granola
~~~
7 c old-fashioned oatmeal
2 c raisins
1 c walnuts
1 c brown sugar
3/4 c butter
1/2 c honey
2 t cinnamon
~~~
mix all the dry ingredients together
in a large bowl.
melt the butter and honey together
and pour over the dry ingredients.
place on a large, greased baking sheet and
bake at 350 for 35 minutes,
stirring occassionally.
cool.
store in an airtight container.

yum, yum, yum!

back to school...

it's time...
time to go back to school!

today is our first day
back at school!
(i say "our" first day
because i drive clary
to and from school~
33 miles one way!)
~~~
clary and i are both
pretty excited about it,
as you can see!
~~~
we had a greaaat summer!
~~~
clary went to
spurs
(therapeutic horse riding)
and swimming
(also therapeutic)
and i gardened!
(physical, mental, spiritual therapy)
~~~
a very therapeutic summer
for the both of us!
~~~
and we're not entirely ready
to let summer go!
~~~
but we will...
~~~
sssssloooooowly
~~~
because it's time
to get back to
our school routine!
~~~
we're off...
~~~
let the school year begin!
~~~~~

tasty tuesday...

another summertime treat
i look forward to
and love
is sweet corn!

fresh from the field...
lots of butter,
salt and pepper!
~~~
this favorite summertime treat
is another treat
i can enjoy
thruout the winter.
~~~
freezing sweet corn
is easy,
messy,
and so worth the effort!
~~~
the recipe i use
to freeze corn
is baked in the oven
after the corn is cut
from the cob.
~~~
the fastest and easiest
way to cut corn off the cob
is to put the top end
of the cob
into the hole
of an angel food cake pan
and cut it off with an electric knife!
~~~
this tip is from
my mom!
~~~
it works like a dream!
~~~
try it!
~~~
frozen sweet corn
~~~
fill 9x13 cake pan full
of fresh corn cut from the cob.
~~~
add:
1/2 c butter
1 c half and half
1 t salt
2 t sugar
~~~
bake at 350 for 1 hour,
stirring occassionally.
~~~
cool the corn
and put into freezer bags.
~~~
what a treat
it is to enjoy
the sweetness of summer's corn
on a cold winter's day!

peaches and cream...

peaches and cream...
another one of
my favorite summertime treats!

i look forward
to peach season
and am always excited
to buy my crate
of faye alberta peaches!
~~~
i will only buy
faye alberta peaches!
~~~
they are the best!
~~~
i use my crate of peaches
to eat
as peaches and cream
and
to make jam.
~~~
peach jam,
for me,
looks and tastes of summer,
and warms me
as i enjoy it's summer-ness with toast
on cold winter mornings.

for now,
it's still summer
and i'll keep enjoying
my peaches and cream!

autumn, that is!

this is my autumn clematis
and it's beginning
to bloom!

is blooming
and the last few days
have been somewhat
autumn-like~
wonderfully sunny,
somewhat cooler,
and incredibly beautiful!

as much as i will
continue to savor summer
as long as it stays,
i will welcome autumn
with all the gifts
and blessings it brings.

colorful corn...

this is the first year
i've planted
indian corn.

what fun it has been!
~~~
i love autumn
and decorating
for autumn,
and i wanted to have
some colorful indian corn
to decorate with!
~~~
the indian corn has tassled
and the pollen is hanging
on the tassles.
~~~
it has been
so much fun
to see
the colors
of the pollen
on the tassles.
~~~
there is
yellow,
pink,
mauve...
~~~
red,
purple,
burgandy...
~~~
a rainbow of colors!
~~~
a rainbow of colors
that i hope
to see
show up
in the kernels
of
the indian corn
that i'll harvest
later this autumn.

it is so much fun
and such a joy
to watch a garden grow!

the pumpkin patch...

i love my pumpkin patch!
~~~
actually, it's a squash
and pumpkin patch!
~~~
and while some
of the other veggies
are slowing down
the pumpkins and squash
are growing
and growing
on these hot summer days!
~~~
the squash and pumpkins leaves
vary in size and shape.
~~~
some even have a mottled coloring.
~~~
the backs of the leaves
and the vines are
rather rough
and prickly.
~~~
the vine's tendrils
and their curlicues
make their way
up and down,
over and around.
~~~
the bright and bold
gold blossoms
hide under
the canopy
of the leaves.
~~~
their sunny gold color
is a colorful contrast
to the grassy green leaves.
~~~
the bright blossoms
vary in size and shape
as the leaves do.
~~~
soon these bright beautiful blooms
will wither
and grow into
the different squash
and pumpkins
i'll harvest
later this autumn.
